3 tbsp Cream Cheese 3 large Egg, fresh, whole, raw .125 tsp Cream of tartar .125 dash Salt
Preheat oven to 300 degrees. Put parchment paper on a cookie sheet and lightly spray with PAM.
Separate eggs. Beat white and cream of tartar until stiff peaks form. In another bowl, beat the yolks, cream cheese and salt until creamy. FOLD the whites into the yolk mixture, folding in well. Don't overmix. There should be some air bubbles left! Bake at 300 degrees for 30-40 min. Cool on cookie sheet 5 min, then cool completely on wire rack. Can be kept in a ziplock bag for a day or two, or frozen, then toasted.
