Cheesy Zucchini and RIce

Ingredients
1 cup, chopped Onions, raw 2 clove Garlic 1 tbsp Grapeseed Oil 1.5 cup White Rice, medium grain 1.5 serving Pacific Natural Foods Organic Vegetable Broth, 1 cup 1.5 cup (8 fl oz) Water, tap 1.5 cup, sliced Zucchini 1 cup, shredded Cheddar Cheese .5 tsp Salt
Directions
Saute onion and garlic in grapeseed oil
Add rice and cook till slightly browned. Stir constantly
Add veggie broth and water. Cover and simmer for 15-20 min. or until liquid is gone.
Add zucchini and cheddar cheese. Mix until cheese is melted.

Serving Size: makes approx. 8 - 1/2 cup servings
