Almond flour pancakes - simple low-carb

Ingredients
1 cup (16 Tbsp.)almond flour 2 large Egg, fresh, whole, raw 1 Tbsp. Butter, salted - melted1 Tbsp. Coconut Oil - melted.25 cup water - filtered.25 tsp Vanilla Extract Additional coconut oil for cooking the pancakes.
Directions
Mix all ingredients in bowl until well combined. Cook over medium heat in skillet, adding coconut oil as needed between batches.
Makes 6 pancakes -- and I do really do believe that 2 are necessary for a weekend breakfast treat.
