Oven Roasted Potatoes

5 medium (2-1/4" to 3-1/4" dia.) Potato, raw 2 tbsp Extra Virgin Olive Oil 2 clove Garlic 2.5 tsp Salt 1 tsp Onion powder
Preheat oven to 400 and coat large baking sheet with nonstick spray.
Steam potatoes until soft or microwave on high for six minutes.
Place potatoes in large bowl; drizzle with oil and sprinkle with garlic, salt, and onion powder. Stir to coat.
Place potato mixture in single layer on prepared baking sheet and bake for 20-30 minutes, until potatoes are browned.
Serving Size: Makes 6 0.75 cup servings
