Everything eggs scramble

Ingredients
2 TBSP Coconut oil1 Cup mushrooms, sliced3 Sweet bell peppers, diced1 Cup Onions, diced6 Egg, whisked with ~3 Tbsp Almond milk4 Tbsp Salsa (divided)1 Tbsp Sour Cream (divided)2 small green onions
Directions
Melt coconut oil in pan over med high heat. Add mushrooms, onions and peppers. Season with salt, pepper, and garlic (I like sliced fresh garlic). Press them to one side of the pan and offset pan to bring the "empty" side onto the center of the burner. Put sliced bacon in the empty side and let cook. Occasionally stir bacon and veggies separately. Use paper towel to absorb excess bacon grease - just don't want too much. When bacon if fully cooked, sir it into veggies and recenter the pan. Turn to med heat. Add whisked eggs and "scramble" as they cook. Divide into 2 bowls. Top with salsa, sour cream and green onions. Enjoy!
