Manchow Soup

Ingredients
3 1tsp Olive Oil .25 cup, chopped Onions, raw .5 serving 1 Med. Green Bell Pepper .5 cup cherry tomatoes Red Ripe Tomatoes .25 cup, chopped Carrots, raw 2 cup (8 fl oz) Water, tap 0.5 tsp Morton Table Salt (by LITTLELADY1996) 1 tbsp Soy Sauce 1 tbsp Corn startch (by JHENION) 1 serving 1 Tbs. chpped fresh mint (by ANEWAY) 2 cup, pieces or slices Mushrooms, fresh
Directions
Heat oil in a wok and add chopped ginger, garlic and onion and stir fry till soft. Add rest of the veggies and stir fry on high till soft. Add 2 cups of water or stock, soy sauce , mint and if like cilantro and simmer for 5 minutes. Make a slurry of corn startch and water and add it to the soup. Bring it back to simmer for a minute or till it thickens a bit. Serve hot with green part of the scalions.
