Donna's Healthy Chicken Tortilla Soup

Ingredients
1 tsp diced garlic¼ C chopped onion1 chopped jalapeño6 cups broth (I used 6 bouillon cubes with 6 cups water)2 boneless, skinless chicken breasts, chopped into bite-sized pieces1 can diced tomatoes½ C fresh green beans cut into small pieces2/3 can black beans4 whole wheat tortillasOptional: 1/3 C shredded cheese per serving (not included in nutritional calculation)
Directions
Stir garlic, onions and jalapeño into 2 cups of broth, bring to a boil. Stir in chicken, reduce heat, simmer until chicken is done, stirring often, about 15 minutes. Add tomatoes, simmer another 5 minutes, stirring often. Add the rest of the broth, the green beans and the black beans. Optional: stir cheese into soup until melted. Boil for 5 minutes. Cut tortillas into small pieces and stir into soup. Continue to cook until green beans are tender but still firm.

*Great topped with chopped avocado and tomato – I even stirred a little cottage cheese into mine!
