12.0 fl oz Milk, canned, evaporated0.75 cup Egg substitute, liquid (Egg Beaters)3.0 tbsp Pumpkin Pie spice1.0 tsp Vanilla Extract0.25 cup Granulated Sugar3.5 serving Pumpkin-Libby's 100% Pure Pumpkin (1/2 cup)
Directions
--Preheat oven to 400 --Spray a 9" pie pan with nonstick cooking spray --Mix all ingredients in a large bowl --Pour batter into pie pan --Bake at 400 for 15 minutes --Reduce oven temperature to 325 and bake an additional 45 minutes or until knife comes out clean when inserted --Cool pie -- Top with sugar free Cool Whip (optional) --excellent source of fiber and protein --delicious, even for breakfast Serving Size: 1/8th of pie

    I make this quite a bit. I reduced the amount of sugar to 1/4 c. Sometimes I substitute the sugar with Stevia. - 9/25/16
