Herbed Crepe with Artichoke

Crepe:1/4 C Egg Beaters egg substitute2 Tbs. 2% Milk1 1/2 tsp. All-Purpose White Flour 1 tsp chopped Basil 1 tsp. chopped Parsley 1/8 tsp. saltpepperFilling:1 Plum tomato seeded and julienned1/4 cup rinsed drained and chopped canned artichoke 3/4 oz. Mozzerella cheese shredded
1. Spray 9" glass pie plate with non-stick cooking spray. In medium bowl whisk egg sub, milk, flour, basil, parsley salt and pepper until blended. Pour mixture into prepared pie plate, tilting to spread evenly. Cover tightly with plastic wrap; slit plastic wrap in center. Microwave on High 1 min 30 seconds to 2 minutes until set.
2. Spread filling ingredients on one side of crepe. Roll crepe in pie plate to enclose. Microwave on High 30-60 seconds or until cheese melts. With spatula, slide crepe onto plate.
