Fruit Loaf (no added sugar, artificial sweetener or fat)

Ingredients
300 ml Fruit Juice 200 gram(s) Sultanas 100 grams dried Apricots (or dates)2 large eggs225 gram(s) Self Raising Wholemeal Flour1 tsp Baking Powder 1 tsp mixed spice
Directions
1. Soak the fruit in the fruit juice for 2-3 hours
2. Preheat the oven to 180 and line a 1lb loaf tin
3. Mix the eggs into the fruit mixture.
4. Add the flour, baking powder and mixed spice together and stir into the fruit mixture.
5. Spoon into the tin and bake for 45-50 minutes.
6. Allow to cool in tin for 10 mins before turning out.
