3 cup, cubes Butternut Squash 1 cup, chopped Onions, raw 5 clove Garlic 1.5 cup Ancient Harvest Quinoa Inca Red, 1/4 cup dry, 3/4 cup cooked 2 cup Baby Spinach (raw) 0.5 cup Cranberries, dried, sweetened (craisins) 0.5 cup Nuts, Pistachios, Kirkland dry roasted,1ser=1/4 cup w/o shells
Roast squash with garlic cloves and onion at 425 for 25 minutes
