1.5 cup Lentils 1 cup, chopped Onions, raw 2 tbsp Butter, salted 5 tsp A Taste of Thai - Red Curry Paste (by LISAG418) 0.5 tbsp Clubhouse Garam Masala spice (by CIOUID) 1 tsp Curry powder 0.5 tsp Turmeric, ground 1 tsp Granulated Sugar 1 tsp (C) Garlic, minced, 1 tsp (by MDHARVILLE) 1 tsp Ginger Root 0.5 tsp Pepper, red or cayenne 2.5 can (6 oz) Tomato Paste 0.25 cup Coconut Milk (Silk)
Cook lentils according to package. Drain and set aside.
Melt butter in saucepan and saute the onion for a few minutes. Add all the spices and stir-fry for 1-2 minutes. Add tomato puree; stir and simmer until smooth. Add the lentils and coconut milk. Stir to combine and simmer for another 15-20 minutes. Serve over rice.
