1 eggplant (large)1 Lemon, juiced2 tbsp Tahini 1/2 tsp Salt 5 cloves Garlic
Rub eggplant with olive oil and roast at 450 degrees for 15-20 minutes, turning a few times, until the eggplant is soft and the skin is charred. Allow to cool and remove the skin.
Process the eggplant, lemon juice, tahini, salt and garlic in a food processor until creamy.
Serving Size: Makes 4 - 1/4 cup servings
