1.0 1tsp Olive Oil2.0 breast, bone and skin removed Chicken Breast (cooked), no skin, roasted2.0 cup, chopped or diced Broccoli, fresh2.0 cup Cauliflower, raw2.0 clove Garlic0.5 cup, chopped Onions, raw4.0 oz Whole Wheat Penne (dry)0.25 cup Classico Sundried Tomato Pesto
Cook chicken breasts in about 1/2 Tbl olive oil until browned and cooked through out. (Salt and pepper well) Remove from heat and let cool to touch. Dice into bit size pieces.
Cook pasta according to package instructions.
While pasta cooks, sauté onion and garlic in remaining olive oil on medium high heat until onion is translucent. Add broccoli and cauliflower sauté until broccoli is a bright green and is just tender (about 3 min). Add diced chicken, cooked and drained pasta and pesto toss in pan. Heat through.
Serve with parmesan cheese if desired and fresh basil.
