Quinoa Black Bean Southwest Salad

3.0 cup 365 Organic Quinoa4.0 large Scallions, raw75.0 gram(s) bell pepper, red, sweet, raw4.0 tbsp Extra Virgin Olive Oil2.0 cup Bush's, Black Beans1.0 clove Garlic6.0 tbsp Cilantro, raw2.0 tbsp Lime Juice, juice of 1 lime1.0 tsp cumin
Cook quinoa: add quinoa and 6 cups water to pot. Bring to boil, turn to low. Place lid on pot and set timer for 15 minutes. Remove from heat after 15 minutes and set aside.
Make dressing: in bowl put olive oil, lime juice, chopped garlic clove and cumin. Wish together and taste. Add salt, cayenne/black pepper to taste.
Chop vegetables. Then add quinoa, vegetables and drained beabs to bowl with dressing. Mix thoroughly.
