Cindy's Crunchy Breaded Chicken Breast

Ingredients
3 oz. Potato Chips, Reduced Fat (I used Cape Cod)1/2 Cup Whole Wheat Flour1 1/2 Tablespoons Herbs de Provence1/4 cup Grated Parmesean Cheese 2 Tablespoons Flax Seed Meal1 Tablespoon Dehydrated Onion Flakes (optional - if you like onion flavor or substitute with dehydrated garlic or fresh garlic)1 cup Soy Milk (or 1 serving)1/2 cup egg substituteOlive Oil or some other healthy Omega-3 Oil to coat baking Sheet
Directions
Preheat oven to 350 Degrees Farenheit.

Take 2 chicken breasts and slice into 3 oz portions or into chunky strips and set aside.

Place potato chips in food processor or blender and pulse until crushed. Add Wheat Flour, Herbs de Provence, Grated Parmesean Cheese, Flax Seed Meal and if desired either dehydrated onion flakes or garlic. Continue to pulse until well mixed. Put contents on a plate and set aside.

Combine Soy Milk and Egg Substitute in a shallow bowl to create an egg wash.

Dip Chicken in egg wash, and then dredge in breading mixture, making sure to coat both sides. Place on a lightly oiled (with olive, canola or some other healthy omega-3 oil), baking sheet. Continue doing this until all pieces are coated on both sides.

Bake at 350 Degrees F, until completely cooked. Depending on oven, may take anywhere from 10 to 20 minutes. Makes anywhere from 5 to 8 servings depending upon serving size.
