Mao Po Tofu and Basmati Rice

block of firm tofu, can of tomato sauce (no salt), grated ginger root, bunch of scallions, 1/4 cup soy sauce, 3 tbsp rice wine vinegar or rice wine, 2 tbsp garlic chili paste, 1 tsp brown sugar, 1 cup of water, and basmati rice
cook rice according to directions.
meanwhile, cube the tofu, chop the scallions and grate the ginger. then take all of the ingredients and combine them over medium heat in a wok. simmer for 15 minutes or until the rice is cooked. Ladle the tofu and sauce over the rice.
