Tofu Chili

Ingredients
Extra Firm Tofu - 3 blocksChili Beans - 2 cansKidney Beans - 2 cansDiced Tomatos - 2 cansTomato Sauce - 1 canMixed Vegetables - 1 package (16 oz)Taco Bell Taco Seasoning - 1 packetChili Powder - 3 TBSCumin - 1 TSPGarlic Powder - 1 TSPOnion Powder - 1 TSP
Directions
Drain (but don't squeeze) and crumble tofu into large stock pot.
Add chili beans, kidney beans, diced tomatos, tomato sauce and mixed vegetables. Stir together.
Add Taco Seasoning - Stir
Add Chili Powder - Stir
Add Cumin, Garlic and Onion - Stir

Cook on medium - high until it begins to boil
Reduce heat and simmer for 20 minutes, stirring occasionally to prevent burning on the bottom of the pot.

Great when served with crackers and shredded cheese!
