Potato Leek soup with red peppers

Ingredients
3 Leeks sliced- bulb and part of the green3 Medium Yellow Potatoes1 Carrot chopped or shredded1/2 C chopped Red Bell Pepper1 T Safflower Oil 1 tsp Ground Cumin1 tsp Turmeric, ground1 tsp Ground Mustard3 Cloves Garlic minced2 C Vegetable Broth 2 C Soymilk
Directions
Microwave potatoes for about 10 minutes. While potatoes are cooking, saute leek, red bell pepper and grated carrot in oil. Add garlic, then broth. Peel and mash potatoes. Add to pot. Add spices and simmer 15 to 20 minutes. Add milk , Enjoy!
For extra richness (and a few more calories) top with shredded cheese of choice.
