1.0 eggplant, unpeeled (approx 1-1/4 lb) Eggplant, fresh2.0 clove Garlic1.5 serving Newman's Own Tomato & Roasted Garlic Sauce, 1/2 cup0.25 cup Spinach, fresh2.2 serving Cheese, Great Value, Finely Shredded Pizza Blend Cheese, 1/3c (28g)
Slice eggplant into on inch slices and add mince garlic to each slice and then cook on a baking sheet at 425 for 18-20 minutes. Remove from oven and spoon pasta sauce onto each slice then layer with Spinach and cover with cheese. Place back into the oven on broil and watch carefully.
