Hearty Potato Soup

2 T. olive oil1 C. diced celery1 C. diced onions2 C. chopped carrots3 chopped baking potatoes (big ones)4 C. low fat chicken broth 16 oz. sliced turkey smoked sausage 4 oz. cubed generic velveeta cheese
brown celery and onions in oil. Add chicken broth and bring to a simmer. Add carrots and let cook for 5 minutes. Add potatoes and cook another 15 minutes. When vegetables are tender, add smoked sausage and cheese. Turn heat down so cheese doesn't burn. Once cheese is melted, it's ready to eat!
