Smoked Turkey Quesadillas

Ingredients
1 Flour or Whole Wheat Tortilla2-4 slices of fresh smoked turkey breast (not deli style slices)2 pieces of artichoke (canned), chopped2 pieces of roasted red pepper, chopped1/4 cup Monterey Jack Cheese (or any preferred meltable cheese)1 Tbsp. chopped red onion (optional)Salsa for dipping (optional)
Directions
Place turkey slices on one half of the tortilla.
Layer remaining ingredients (I place cheese last, on top of the other ingredients) on top of the turkey.
Fold tortilla in half.
Heat in nonstick pan on medium heat, flipping once or twice, until heated through and cheese is melted; tortilla will be slightly browned.
Cut diagonally into 6 triangular pieces.
Dip in salsa if desired.

Makes 6 triangular pieces, which can be 1 large or 2 small servings.
