Lemon bars (less cholestoral extra fiber)

Crust:3/4 c softened butter1/2 c powdered sugar1 1/2 c all purpose flour1/2 c ground flaxTopping:1 c Egg Beaters1.25 c sugar1/2 tsp baking powder1/4 c all purpose flour1/2 c fresh lemon juice1 tbsp grated lemon zest1 tsp vanilla extract
Preheat oven to 350.
In a medium sized bowl, beat butter with hand mixer and add dry ingredients slowly until crumbly in appearance.
Press mixture evenly into bottom of a 13 x 9 pan and bake 14-16 minutes, until golden brown at edges.
Meanwhile, in bowl, combine egg beaters, sugar, lemon juice and zest, vanilla, flour and baking powder,beating gently to combine well.
Once crust is done, remove from oven and pour lemon mixture onto hot crust.
Bake @ 350 for 25-28 minutes, until edges are golden.
Allow to cool on wire rack before cutting into 24 servings.
