6 cup Spaghetti Squash 2 serving 1 Med. Green Bell Pepper 1 large Onions, raw 1 cup Leeks 1.5 cup Sauce, Hunts, Cheese & Garlic, Spaghetti Sauce 8 serving Great Value Mozzerella Cheese (shredded/part skim) 10 ounces Chicken Breast (cooked), no skin, roasted 2 tbsp Extra Virgin Olive Oil
Bake squash (split in half) for approximatley 40 min. at 400, let cool. Coat 9x13 baking dish with olive oil and put squash in bottom of pan.
While squash is baking: Cut chicken into bite size pieces, chop pepper, onion & leeks. (add any veggies you like)
In skillet, saute veggies and cook chicken through.
Mix in sauce. Pour chicken mixture into squash, cover with cheese and foil over baking dish. Bake at 400 until cheese is bubbly and browning, about 20-30 min. depending on your oven.
