Chicken Piccatta

Ingredients
1 lb. boneless chicken breastsalt/pepper to taste1 TBSP flour1 TSP Canola Oil1-2 med. lemons for juice1 C. low-sodium chicken broth1 TSP butter1 TSP flour2 TBS Parsley
Directions
Cut chicken into quarters, place in between wax paper and pound to 1/4" thickness. Salt/Pepper to taste and dust each side w/ 1 TBSP flour.

Heat oil in med. skillet over med. heat. Brown chicken on both side, turing frequently. Squeeze lemon juice over chicken to taste.

Move chicken to one side of skillet. Add broth and butter. Bring to boil. Add 1 TSP flour to thicken sauce. Stir. Boil until sauce thickens. Add parsley.

Serve Chicken w/ sauce.
