Light cocoa cupcakes

Ingredients
0.75 cup Wheat flour, white, all-purpose, unenriched0.75 cup Granulated Sugar1.0 tsp Baking Powder0.5 tsp Baking Soda0.25 tsp Salt6.0 tbsp Cocoa, dry powder, unsweetened3.0 tbsp Butter, unsalted0.38 cup Buttermilk1.0 large Egg, fresh, whole, raw1.0 large Egg white, fresh
Directions
Pre heat oven to 175 c or 350 F. In a bowl sift dry ingredients together, flour, baking powder, baking soda and sugar. In another bowl, using an electric mixer whisk cocoa powder with 3 tablespoons of hot water to make a paste. This step intensifies the chocolatey flavour. To cocoa, add egg, egg white and melted butter. Whisk till all combined then add flour mixture and whisk for a minute making sure the batter is homogeneous. Scoop batter evenly bu ice cream scoop into muffin tin and put in oven for 22 minutes or till a skewer comes out clean when testing the center.
