Simple Salad

Ingredients
10 Fresh Rocket Leaves1 Cup shredded iceberg lettuce1 large scallion cut into thin rings2 ripe tomatoes, sliced into 10thsCucumber (4"long) peeled and sliced thinlyHalf a cup of mixed bell peppers2 tbsp Olive Oil1 tsp Italian Herbs, dried1 tsp Black PepperSprinkle of salt
Directions
In a large salad bowl add the sliced scallions, olive oil, salt, pepper and Italian herbs.
Stir really well.
Add the Rocket and lettuce, gently stir. Then add remaining ingredients stirring after each addition.
Leave at room temperature before serving.
