Ingredients
3 slices thick-cut bacon 5 oz center-cut pork3 15-oz cans black-eyed peas (or the equivalent from dry)1 medium green pepper, chopped1 cup onion, chopped2 boil-in bags Success brown rice (or the equivalent)1 clove garlic, chopped fine1 cup low-sodium beef brothA dash of cayenne pepper to taste
Directions
Cook two bags of rice according to package directions; drain and cool. In the bottom of medium stew pot, brown bacon and pork together. Remove the meat and leave two tablespoons of the drippings. Sauté the onion and pepper in the fat until the onion is translucent. Add the peas, broth, garlic, and a dash of cayenne pepper, if desired, stirring between additions. Crumble the bacon; add that and the pork. Bring to a boil; reduce the heat to medium-low and simmer for 15 to 20 minutes. At the end of cooking, add the rice and heat through.
