3 slices thick-cut bacon 5 oz center-cut pork3 15-oz cans black-eyed peas (or the equivalent from dry)1 medium green pepper, chopped1 cup onion, chopped2 boil-in bags Success brown rice (or the equivalent)1 clove garlic, chopped fine1 cup low-sodium beef brothA dash of cayenne pepper to taste
Cook two bags of rice according to package directions; drain and cool. In the bottom of medium stew pot, brown bacon and pork together. Remove the meat and leave two tablespoons of the drippings. Saut� the onion and pepper in the fat until the onion is translucent. Add the peas, broth, garlic, and a dash of cayenne pepper, if desired, stirring between additions. Crumble the bacon; add that and the pork. Bring to a boil; reduce the heat to medium-low and simmer for 15 to 20 minutes. At the end of cooking, add the rice and heat through.
