1 cup plain yogurtpinch of sugar1 T oil1/2 tsp mustard seeds1/4 tsp fenugreek seeds1/2 inch fresh ginger, mincedpinch of asefetida1 whole dried red chile1 small onion, finely chopped, about 1 cuppinch of salt2 Tsp chopped cilantro
-Whisk the yogurt until smooth and mix in the sugar, set aside
-heat the oil in a pan just big enought for the onions and add the mustard & fenugreek seeds. When they start to pop, add the ginger, asefetida, & chile. Cook, stirring, for a minute to bring out the flavors. Add the onions and lower the heat. Let them cook about 10-15 minutes to soften.
-pour the onion mixture into the yogurt and mix through. Add salt and cilantro. Let chil before serving.
