IHOP Pancakes

Ingredients
1 1/4 c. flour1 egg1 1/4 c. lowfat buttermilk1/4 c. sugar1 heaping tsp baking powder1 tsp baking soda1/4 c. oilpinch of salt
Directions
1. Preheat skillet over medium heat. Use a pan with a nonstick surface or apply a little nonstick spray.
2. In a blender or with a mixer, combine all of the remaining ingredients until smooth.
3. Pour the batter by spoonfuls into the hot pan, forming 5" circles.
4. When the edges appear to harden, flip the pancakes, They should be golden brown.
5. Cook pancakes on the other side for the same amount of time, until golden brown.

Makes 8-10 pancakes. (Nutrition info is based on 8 cakes.)

    I got this same recipe off food.com several years ago, and we make a double batch almost every weekend at my house. I don't always use the baking powder, and I usually use whole wheat flour. Best texture ever. - 11/27/11
