Danny Seo's Arugula Beetza Pizza

Ingredients
Premade Pizza Dough1 cup Pizza Sauce2 cup Shredded Mozzarella1 cup Arugula 3 Roasted Beets 1 tsp Olive Oil 1 tsp Avocado Oil 1 cup Zucchini (Grated)
Directions
Preheat oven to 400 degrees. Wrap beets tightly in aluminum foil and roast for about an hour or until tender. When cooled, peel off the skins and discard.

Set oven to 475 degrees.


Warm up pizza sauce on the stove. Optional: grate zucchini in to the sauce and stir.

Warm up avocado oil in a cast iron pan and spread out pizza dough onto the pan.

Top pizza crust with sauce and mozzarella cheese. Let cook until browned on bottom then transfer over to the oven and bake for 5-7 minutes.

Once cheese bubbles, remove from oven and top pizza with fresh arugula, roasted beets and drizzle with olive oil.
