Ingredients
1 tbsp Canola Oil 1 cup, diced Ham, extra lean, (5% fat) 2 medium Carrots, raw 1 head, medium (5-6" dia) Cauliflower, raw 1 slices (1" dia) Ginger Root 1 cup Peas, frozen 1 cup Dole Pineapple Tidbits 100% Pineapple juice 2 serving Garlic clove 1 serving Bird Eye Steamfresh Specially Seasoned, Garlic Cauliflower 2 tbsp Kikkoman Less Sodium Soy Sauce 2 serving Green Onion (fresh-1 stalk) 2 large Egg, fresh, whole, raw
Directions
Rice the cauliflower. Grate Carrots into bowl. add peas, gate ginger to measure 1 T. Chop garlic, thinly slice green onions. Add white part to bowl, reserve green tops for garnish. Heat oil, add ham, cook till browned. Remove from skillet and set aside. add ginger, garlic, onions to skillet, cook till fragrant. Add cauliflower, carrots and peas. Cook 2-3 minutes. Beat eggs, create well in middle of vegetable mixture. Add eggs, scramble, then mix into vegetables. Remove from heat. Add pineapple, ham and soy sauce. Garnish.
