Vegan Meatball Subs

Meatless balls:1 cup crumbled soy ground ‘meat’ (like Gimme Lean)1/3 cup finely minced red onion1/2-2/3 cup fresh breadcrumbs1 teaspoon finely minced fresh basil1/2 teaspoon dried oregano1/2 teaspoon garlic powder1/2 teaspoon sea salt1/2 teaspoon cracked black pepper1/4 cup tomato pasteTomato Sauce:Extra virgin olive oil1 small yellow onion, finely diced3-4 cloves fresh garlic, finely mincedSea saltGenerous pinch dried oregano1, 6-ounce can tomato paste2 large cans diced tomatoes, do not drain juices1 carrot, left whole2 bay leaves3-4 sprigs fresh basil, leaves removedCracked black pepper4 Hot dog buns4 oz. of shredded vegan mozzarella
Prepare the sauce. Preheat oven to 375o.
Prepare the meatballs. Combine all ingredients well and form into balls. Place on an oiled baking sheet and bake for 20
minutes, turning once, halfway through cooking.
Prepare the tomato sauce. Place a small amount of oil, onion and garlic in a soup pot over medium heat. When the onions
begin to sizzle, add a pinch of salt and sauté for 2-3 minutes. Add tomato paste, 2 cans of water (tomato paste can) and stir
until smooth. Add tomatoes, a light seasoning of salt, and bay leaves. Bring to a boil; reduce heat to low and cook,
covered for 45 minutes, stirring occasionally. Remove bay leaves; season taste with salt and pepper; stir in basil
and cook, uncovered, for 15 minutes more.
Allow sauce to cool and the assemble subs. 3-4 meatballs depending on the size of the meatballs you make. Smother with sauce and top with cheese.
