6 small Sweet potato, cooked, baked in skin, without salt 16 oz Ground beef, extra lean (15% fat) pan broiled 2 cup pieces Mushrooms, cooked 1 cup Peas, frozen 1 cup, chopped Onions, raw 3 carrot Carrots, cooked
Heat oven to 350- put whole garlic in oven for 40 min with olive oil drizzle.
Cube and steam sweet potatoes. Drain. Add garlic and mash.
Saute all veggies until soft, add peas at the end. Add salt, pepper, and thyme to taste.
Cook beef and drain off.
Add veggies to beef and mix well. Add to baking pan and cover with sweet potato mixture. Bake at 350 for 10-15 min.
Serving Size: Makes 1 8.5 x 11 " pan
