Dark Chocolate and Silk Protein & Nut Milk Pudding

Ingredients
2 large Egg Yolk 1 dash Salt 1.50 tsp Vanilla Extract 2 tbsp Cocoa Powder, Hershey's Natural Unsweetened (unlisted nutrients estimated from USDA website) 2 tbsp cocoa powder, Hersheys Special Dark, unsweetened 2 serving Silk Protein & Nut Milk (1 cup serving) 0.33 cup Granulated Sugar 2 tbsp Argo Cornstarch
Directions
1. In a medium saucepan, combine 1 c of the milk, sugar and cocoa. Bring to a simmer over medium-high heat. Remove from heat.
2. Meanwhile, whisk the remaining 1 c of the milk, cornstarch, salt, egg yolks and vanilla in a bowl.
3. Gradually whisk the hot milk into the egg mixture. Return to the saucepan and cook over medium-high heat, whisking constantly, until the pudding comes to a full boil. Reduce the heat to a simmer and continue whisking until thick, 2 to 3 minutes.
4. Pour the pudding into small cups, cover and refrigerate at least 4 hours.
