Lo-Fat Chicken & Rice Cassarole

Ingredients
2 Cooked, boneless/skinless chicken breasts cut into 3/4 inch cubes1 Package Uncle Ben's Ready-Made Chicken flavored rice1 Can Campbells Health Request Cream of Mushroom Soup1 Can Del Monte Mixed Vegetables1 Small jar of mushrooms1 Cup Kraft Fat Free Shredded Mozarella Cheese1/4 Cup skim or 1% milki1/2 Small finely chopped onion1 Tsp fresh rosemary2 Tsps fresh parsely1 Tsp onion powder1/2 tsp black pepper1/2 tsp salt1.5 Slices lite whole-wheat bread
Directions
Heat the oven to 350 degrees. Spray a 1.5 qt cassarole dish with spray can of vegetable or canola oil. In large bowl or pot combine all ingredients except the bread. Pour into prepared cassarole dish. Tear small chunks of the bread and place them on top of the cassarole for a topping. Bake in 350 degree oven for 30 minutes. This makes about 6 1 1/2-cup servings.
