Sweet Potato Brussel Sprouts Hash

Ingredients
1lbs Brussels sprouts, trimmed and halved3 medium slices Bacon2 sweet potato, diced 1 cup, chopped Onions, raw 1 tbsp Olive Oil
Directions
Heat olive oil in cast iron skillet. add diced sweet potato and onion, cook covered until potatoes are tender stirring every few minutes. Once cooked remove to bowl and add bacon to cast iron. Cook until crisp. Remove and drain on paper towels. Cook sprouts in bacon fat. Once tender crisp stir in potato mixture and crumble cooked bacon on top.
