Dark Chocolate Coconut Milk Pudding

2 cup Simple Truth Coconutmilk 2 tbsp Cocoa Powder, Hershey's Natural Unsweetened 2 tbsp Cocoa powder, Hershey's Special Dark, unsweetened 1/3 cup Granulated Sugar 1 dash Salt 2 tbsp Argo Cornstarch 2 large Egg Yolk , well beaten1.5 tsp Vanilla Extract
1. In a medium saucepan, combine 1 c of the milk, sugar and cocoa. Bring to a simmer over medium-high heat. Remove from heat.
2. Meanwhile, whisk the remaining 1 c of the milk, cornstarch, salt, egg yolks and vanilla in a bowl.
3. Gradually whisk the hot milk into the egg mixture. Return to the saucepan and cook over medium-high heat, whisking constantly, until the pudding comes to a full boil. Reduce the heat to a simmer and continue whisking until thick, 2 to 3 minutes.
4. Pour the pudding into small cups, cover and refrigerate at least 4 hours.
Makes 5 1/2 c. servings.
