4.0 tbsp Butter, salted3.0 cup, shredded Cheddar Cheese1.0 cup, fluid (yields 2 cups whipped) Heavy Whipping Cream2.0 medium Carrots, raw1.0 head, medium (5-6" dia) Cauliflower, raw2.0 stalk, medium (7-1/2" - 8" long) Celery, raw3.0 clove Garlic1.0 cup, chopped Kale1.0 medium (2-1/2" dia) Onions, raw4.0 cup Vegetable Broth
Melt butter in pan. Saute onion, garlic, celery, and carrot until softened. Add veggie broth, cream, and cauliflower. Bring to a boil, stirring occasionally. Reduce to a simmer and cover until cauliflower softens. Add cheese a little at a time, stirring frequently to keep from sticking. Add kale. Use immersion blender to break down to desired consistency.
