Ingredients
0.25 cup Cream Cheese8.0 fl oz Heavy Whipping Cream0.5 cup slices Carrots, cooked1.0 cup Coconut Milk (Silk)16.0 oz Shrimp, cooked1.0 cup Clams, canned, meat only1.0 cup Chicken stock, home-prepared3.0 serving Bacon - Farmland Thick Sliced Bacon1.0 gram cauliflower-net
Directions
Cook bacon in bottom of pot until crisp, remove and set aside leaving fat. Sautee shrimp until just pink, remove and set aside. Chop onions and garlic and sautee in bacon fat until soft Add chopped cauliflower and carrots, hwc and coconut milk and seasonings. Boil, then reduce heat. Simmer until soft. Take half of soup and blend until smooth, add back to pot Add broth and cream cheese bacon and shrimp, simmer until combined Serving Size: Makes 8 generous servings
