Confetti Burritos

Ingredients
1 can fire-roasted Tomatoes 1.75 cup Beans, black .25 cup Green Chili Peppers, canned2 cup Kernel Corn, Frozen 1 medium Tomatoes, chopped 1 clove Garlic, minced1 tsp. chili powder1/2 tsp. ground cumin2 cups Brown rice 6 large whole wheat tortillas1 cup, shredded Cabbage, fresh 0.5 cup, chopped Scallions1/4 cup chopped cilantro (optional)Avocado, optional for topping
Directions
1. Place fire-roasted tomatoes in a large pot. Add the beans, corn, green chilies, tomato, garlic chili powder, and cumin. Cook, stirring occasionally, for about 8 minutes.
2. Stir in the rice and heat through.
3. Wrap the tortillas in a cloth and heat for 2 minutes in the microwave. Spread a line of the bean and rice mixture down the center of each tortilla.
4. Sprinkle on a few green onions, cabbage, avocado, and salsa if desired.
5. Roll into a burrito and serve.
