Low-fat Creamy Potato Soup

Ingredients
6 cups chopped/shredded potatos1 can Cream of Chicken Soup 98% fat-free1 can Cream of Celery Soup 98% fat-free1 1/2 cups skim milk3 tbsp salt1 tsp pepper1 cup carrots finely chopped1 cup chopped onion1 block fat-free cream cheese
Directions
Boil potatos, onions, carrots, & seasonings until tender. Melt together (in microwave) the 2 soups and block of cream cheese. When the veggies are tender add the milk and the soup mixture. I use a whisk to throughly incorporate everything and to get the pieces smaller. (I have very picky small children). This pot of soup makes about 10 servings (1 cup each). May also sneak in some leftover ham or broccoli. Green onions & shredded lowfat cheeses make a nice garnish.
