Special K Vegetarian Loaf

Ingredients
1/2 c margarine, melted1 c chopped onions1 c chopped pecans1 T poultry seasoning4 medium eggs4 c nonfat cottage cheese4 c Kellogg's Special K Cereal1 c Morningstar Farms "burger" crumbles1 c nonfat milk
Directions
Combine all ingredients in a large mixing bowl. Place in a 9 x 12 casserole dish (sprayed with non-stick cooking spray) and evenly spread. Bake at 350 degrees for 1 to 1 1/2 hours until golden brown. (Longer time will produce a more solidified loaf)

    This recipe is delicious. We did have to bake it for a longer period of time than an hour. Next time I think I'll add more Special K. - 11/11/11

    I haven't made it yet but will try it...My grandmother made a similar version but with less ingredients. She found the recipe in a vegetarian cookbook she had bought at Apple Valley in Berrien Springs, MI. I look forward to trying your version....Thanks - 6/25/08
