Chicken Marrakech

4 x 4 oz. Chicken Breasts, sliced thinly 1 Carrot, diced1 Onion, diced2 Celery Stalks, diced1 Red Pepper, diced1 Green Pepper, diced3 tbsp. Marrakech Spice Mixture1 tbsp. Vegetable Oil1 tbsp. Cornstarch1½ cups Chicken Stock¼ cup Whipping Cream2 cups cooked Basmati Rice
In a large sauté pan, place all the vegetables over medium heat with oil.
Sauté until onions are translucent.
Add spice mixture and sauté for 30 seconds.
Add the stock and boil for 2-3 minutes.
Add the chicken and simmer until cooked through.
Add the cream.
Mix cornstarch with just enough water to dissolve and stir in.
Season with salt and pepper and serve over rice.
