Cheesy chicken broccoli quinoa

Ingredients
14 gram(s) Avocado Oil - Chosen Foods - 1 TBSP 1 cup, chopped Onions, raw 1 cup, pieces or slices Mushrooms, fresh 1 clove Garlic 1 tsp Thyme, ground 16 ounces Chicken Breast (cooked), no skin, roasted 1 package (10 oz) Broccoli, frozen 1 cup Vegetable Broth 16 oz Mozzarella Cheese, part skim milk 1 cup 365 Organic Quinoa
Directions
I cook the quinoa in the vegetable broth and a cup of water in a separate pan. Bring liquid to a boil add rinsed quinoa and cook exacly 15 minutes In low. Remover from heat and let stand. Then saute the mushrooms, onions and Carli in the avocado oil. Cube chicken and add the vegetables. Cook until almost done. And broccoli, cover and cook until tender add thyme and stir in quinoa. Sprinkle cheese all over, cover and let simmer until cheese melts.
