Paprika Chicken & Spinach

16 oz Tyson boneless, skinless chicken breast 2 tsp Paprika 2 tbsp Butter, salted 3 tbsp Olive Oil 1 tsp Thyme, ground 8 fl oz White Wine 1 package (10 oz) Spinach, fresh
1. season chicken with paprika and salt/pepper (to taste)
2. Heat 2 TBSP oil over medium high heat and add chicken. Cook on first side until crisping golden brown, flip and turn heat down to medium. Let cook a few minutes.
3. Add butter (and more oil if necessary), thyme and garlic.
4. Cook, stirring the thyme and garlic around before adding the wine.
5. Bring the wine to a gentle simmer and let cook for 20 minutes. It will reduce; add more if necessary.
6. Add the spinach and let wilt fully. Season with salt and pepper (if desired).
