Ingredients
453.0 Grams Chicken Thigh4.0 cup (8 fl oz) Chicken Broth1.0 bunch Broccoli, fresh2.0 clove Garlic0.25 cup, chopped Onions, raw2.0 sweetpotato, 5" long Sweet potato1.5 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)2.0 tbsp Lime Juice, juice of 1 lime
Directions
Roast chicken (seasoned with cumin, salt, cayanne, and paprika) in oven 20 mins. Dice. Cube veg. Bring to boil in broth 15 mins, reduce to medium and add coconut milk. Cook until veg are tender. Remove sweet potatoes, blend remaining in blender until smooth. Add all back to soup pot along with chicken, reheat for 2 minutes. Garnish with lime juice, minced onion, an cilantro. Serving Size: Serves 2 with left overs
