14 oz. Barilla PLUS Elbow Macaroni6 oz. frozen Sweet Potato Fries2 cups Non-fat Milk4 oz. Kraft 2% Milk Sharp Cheddar Cheese, grated2 oz. Monterey Jack Cheese, grated1/2 cup Lowfat Ricotta Cheese1 tsp. salt1 tsp. ground Mustard1 tsp. Chili Powder2 Tbsp. seasoned, dry bread crumbs2 Tbsp. Parmesan cheese, grated1 tsp. olive oil
1) Boil (salted) water for macaroni and cook 6-7 minutes until tender, but firm.
2) Preheat oven to 375. Spray 13x9 pan with cooking spray.
3) Put frozen fries on a plate and microwave 2-3 minutes until soft.
4) Add milk and fries to blender - blend until smooth.
5) Pour mixture into saucepan and cook on medium heat until simmering - stir often.
6) Remove from heat; add cheeses and spices.
7) Drain macaroni and mix with cheese sauce; pour into 13x9 pan.
8) In a small bowl, mix bread crumbs, parmesan cheese, and olive oil. Sprinkle over macaroni.
9) Bake for 18 minutes. Then broil for 2 additional minutes (watching carefully, so it doesn't burn) to brown crumb mixture.
