Instant Pot Baked Potato Soup (Paleo)

Ingredients
6 medium (2-1/4" to 3-1/4" dia.) Potato, raw 14 gram Avocado Oil - Chosen Foods - 1 tbsp=14g 1 medium (2-1/2" dia) Onions, raw 32 fl oz Chicken Broth 1 tsp Salt 1 tsp Onion powder .5 tsp Pepper, black 1 tsp Garlic powder 1 cup Milk, SO Delicious® Coconut Milk, unsweetened
Directions
Put IP on saute feature. Drizzle in the cooking fat and toss in onion. Saute until translucent or about 8 minutes. Then add in your potatoes, stock and seasonings, reserving only milk and garnishes for later. Secure lid and close. Press Soup button (high pressure, 30 minutes). Once done, quick release remove lid. Now use an immersion blender to puree the contents until smooth. Pour in dairy free milk stir. Serve with bacon, chives and df cheese ( topping are not included in calorie count).
