Ingredients
4 c. shredded romaine2 c. chopped tomatoes1 c. garbanzos (chickpeas), diced or chopped1 c. thin sliced or chopped sweet onions (red or vidalia preferred)1/2 c. diced bell peppers (red or yellow especially good)4 oz. shredded mozzarella2 oz. hard salami (diced small, about 1/4 inch)2 c. diced turkey or chicken breast1/4 c. low fat Italian dressing (or combo red wine or cider vinegar, oil and italian spices)
Directions
Mix chopped ingredients in a large bowl. Best refrigerated for at least an hour before eating, to let flavors blend.Excellent for picnics because no mayo or egg products. Makes 4 servings.
